Pimento Cheese Deviled Eggs

Ingredients

  • 6 hard-boiled eggs
  • ¼ cup mayonnaise
  • 2 tablespoons jarred pimentos chopped
  • 1/3 cup grated sharp cheddar cheese
  • 2-3 dashes hot sauce
  • Kosher or fine sea salt
  • Freshly ground black pepper

Instructions

  • Peel the eggs and cut in half lengthwise. Scoop the yolks into a mixing bowl and smash with a fork until fairly smooth. Add the mayonnaise, pimentos, cheese, and hot sauce. Mash everything together until smooth. Season to taste with salt and pepper.
  • Pipe or spoon the yolk mixture into the egg whites. Refrigerate until ready to serve.
