Pumpkin Caramel Swirl Brownies

Ingredients

For the pumpkin caramel:

  • ½ cup unsweetened pumpkin purée
  • ¼ cup unsweetened smooth almond butter
  • ¼ cup coconut sugar
  • 2 tablespoons unsweetened plain or vanilla almond milk
  • 2 tablespoons lucuma powder or 1 tablespoon carob powder
  • 1/8 teaspoon pure stevia powder or ¼ teaspoon plain or vanilla pure stevia liquid
  • Pinch fine sea salt

For the brownies:

  • 8 ounces unsweetened pumpkin purée about 1 cup
  • ½ cup coconut sugar
  • ¼ cup virgin coconut oil softened
  • ¼ cup unsweetened smooth almond butter
  • 2 tablespoons coconut nectar
  • 2 tablespoons whole psyllium husks
  • 1 tablespoon ground flaxseed meal
  • 1 tablespoon vanilla extract
  • ¼ cup unsweetened plain or vanilla almond milk plus more if needed
  • ¼ teaspoon pure stevia powder or ½ teaspoon plain or vanilla pure stevia liquid
  • 1 cup Ricki’s All Purpose Gluten-Free Flour Mix see recipe here
  • 2/3 cup unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1/8 teaspoon fine sea salt

Instructions

  • Spread about half of the batter in the pan. Dollop the caramel randomly over the batter, leaving a few empty spots here and there. Dollop with the remaining brownie batter, filling the empty spots and covering some of the caramel if necessary.
  • Use a thin spatula or knife to gently swirl and fold the batter (as you would egg whites into a batter), so that some of the caramel ends up under the brownie batter. Gently smooth the top if there are any gaps.
  • Bake for 30-40 minutes, rotating the pan about halfway through baking, until a tester inserted into the brownie portion comes out clean but moist. Allow to cool before cutting into squares. May be frozen.
