Purple Potato Quinoa Salad

This potato quinoa salad is a great way to detox your body without feeling deprived. Purple potatoes and quinoa not only fill you up, but are also full of antioxidants and fiber. Tasty and fiber-rich hemp hearts and cashews are packed with protein and add a nice crunch. Orange juice and zest add a touch of sweetness.

Ingredients

  • ½ pound purple potatoes cut into ½-inch pieces
  • ¼ cup quinoa
  • ½ cup water
  • 2 cups mixed salad greens
  • 2 tablespoons hemp hearts
  • 2 tablespoons raw cashews
  • 2 medium scallions thinly sliced
  • 1 tablespoon finely chopped fresh dill
  • 1 garlic clove minced
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons honey
  • Juice of 1 large orange
  • 1 teaspoon finely grated orange zest
  • Kosher or fine sea salt
  • Freshly ground black pepper

Instructions

  • Put potatoes in a large pot and cover with water. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 15 minutes. Drain well.
  • Meanwhile, bring the quinoa and water to a boil in a small pot over high heat. Reduce heat to low, cover, and simmer for 10-15 minutes until the water is absorbed. Remove from heat, fluff with a fork, and set aside for 10 minutes.
  • In a large bowl, combine the potatoes, quinoa, mixed salad greens, hemp hearts, cashews, scallions, dill, and garlic. Toss to combine. Add the olive oil, honey, orange juice, and orange zest. Toss to combine. Season to taste with salt and pepper.
