Raw-Butterscotch-Blondies

Ingredients

  • 1½ cups raw walnut halves (plus more for garnish, if desired)
  • ½ cup raw shelled hemp seeds
  • ¼ cup lucuma powder
  • 6 tablespoons chopped prunes (6-8 prunes)
  • ¼ cup coconut nectar
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon fine sea salt

Directions

Line an 8-inch loaf pan with plastic wrap and set aside.

In a food processor, process the walnuts, hemp seeds, and lucuma until powdered. Add the remaining ingredients and process until the mixture forms a fairly smooth “dough.” Take care not to over-process, or the oils will separate out of the nuts. It should look moist but not oily, and stick together when pressed between your fingers.

Pack the mixture into the pan and cover with more plastic wrap. Refrigerate for at least 6 hours or overnight before cutting into small squares. Top each square with a walnut half, if desired.

Servings

Makes 8-12 small blondies

This raw dessert employs a combination of dried fruit, coconut nectar, and lucuma powder for a delectable butterscotch flavor. If lucuma is hard to come by, you can substitute with carob powder or coconut sugar for a slightly different, but still delicious, result.
