Red, White & Blue Popsicles

Ingredients

  • 1 pound strawberries , fresh or frozen
  • ½ cup coconut sugar , divided use
  • 4 tablespoons water , divided use
  • 2 teaspoons fresh lime juice , divided use
  • 16 ounces vanilla coconut milk yogurt
  • 3 tablespoons coconut cream (skimmed from the top of a can of full-fat coconut milk)
  • 8 ounces blueberries , fresh or frozen

Instructions

  • In a medium saucepan, combine the strawberries, ¼ cup coconut sugar, 2 tablespoons water, and 1 teaspoon lime juice.
  • Simmer gently for 2-3 minutes.
  • Remove from heat and cool for 5 minutes.
  • Pour into a blender and puree to desired consistency.
  • Fill each popsicle mold 1/3 of the way with the strawberry mixture.
  • Freeze for 30 minutes.
  • In a small bowl, combine the coconut yogurt and coconut cream.
  • Remove the molds from the freezer after 30 minutes and top the strawberry layer with the yogurt mixture.
  • The molds should now be 2/3 of the way full, leaving enough room to top with the final layer.
  • Return the pops to the freezer for 15-30 minutes.
  • In a medium saucepan, combine the blueberries, remaining ¼ cup coconut sugar, 2 tablespoons water, and 1 teaspoon lime juice.
  • Simmer gently for 2-3 minutes.
  • Remove from heat and let cool for 5 minutes.
  • Pour into a blender and puree to desired consistency.
  • Remove the molds from the freezer and top the yogurt layer with the blueberry mixture.
  • Return to the freezer to set for 1 more hour before serving.
