I like to turn to a slow cooker casserole or layered dish on busy nights, This Sausage & Potato One Pot Dinner is one of my favorites.

Sausage & Potato One Pot Dinner

Ingredients

  • 5-6 fully cooked smoked sausage links sliced (I like the Aidell’s brand that are labeled gluten-free)
  • 4-6 medium red potatoes washed and cut into 2-inch chunks
  • 1 cup baby carrots
  • 1 14.5-ounce can diced tomatoes
  • 1 15-ounce can corn kernels
  • Grated Parmesan cheese for serving (optional)

Instructions

  • Use a 6-quart slow cooker. Place the sliced sausage into the bottom of your slow cooker insert and add the potato chunks and carrots. Pour in the entire can of tomatoes and can of corn. Stir gently with a large spoon to evenly disperse the ingredients.
  • Cover and cook on low for 7-8 hours or on high for about 4 hours. Serve topped with Parmesan cheese, if desired.
