Simple Mayo-Free Coleslaw

Ingredients

  • 6 cups thinly sliced green or red cabbage or a combination of both
  • cups shredded carrots
  • ½ cup thinly sliced scallions
  • 3 tablespoons tahini sesame seed paste
  • 3 tablespoons hemp seeds
  • 1 tablespoon nutritional yeast
  • ½ teaspoon Dijon mustard
  • Juice of 1 lemon
  • 1 garlic clove
  • 1/3 cup water plus more as needed
  • Kosher or fine sea salt to taste
  • Freshly ground black pepper to taste

Instructions

  • In a large bowl, combine the cabbage, carrots, and scallions. Toss to combine.
  • In a blender, combine the tahini, hemp seeds, nutritional yeast, mustard, lemon juice, garlic, and water. Blend on high until completely smooth. If the dressing is too thick, add more water, 1 tablespoon at a time, until you’ve reached your desired consistency (it should be pourable). Taste and season with salt and pepper.
  • Pour the dressing over the vegetables and thoroughly toss with tongs until the entire slaw is evenly coated. Taste and adjust seasonings, as needed. Refrigerate in an airtight container until ready to serve.
