Gluten Free Harvest Chicken Apple Stew


  • 4 organic boneless, skinless chicken breasts, diced
  • 2 cups homemade or organic chicken stock
  • 1 medium sweet onion, diced
  • 2 medium apples, peeled, cored, and diced
  • 1½ cups frozen or fresh green beans
  • 1 tablespoon minced garlic
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried sage
  • ½ teaspoon dried marjoram
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • 2 cups butternut squash, pureed


  1. Place all of the ingredients except the pureed butternut squash in a slow cooker and set on low for 6-8 hours.
  2. Right before serving, gently stir in the squash and let it warm back up.


Serves 4-6

In this recipe, I use butternut squash as the thickener. Since that particular squash is notoriously hard to peel and cut, I find that buying the frozen organic chunks saves time and my poor fingers! I simply defrost and blend it, then add it into the stew.
