Spicy Hemp Avocado Toast

How can something so simple taste so divine? Avocado toast is a staple among plant-based eaters, and it’s no wonder. In addition to offering a hefty dose of potassium (a mineral in which most of us are deficient), high fiber, and healthy monounsaturated fats in each bright green fruit, there’s just nothing quite as delicious as a perfectly ripe avocado.

Spicy Hemp Avocado Toast

Ingredients

  • 1 slice gluten-free bread or a rice cake
  • ½ avocado sliced
  • 1 tablespoon fresh lime juice
  • ½-1 garlic clove minced
  • Kosher or fine sea salt to taste
  • 1 tablespoon kimchi spicy sauerkraut or regular sauerkraut
  • 1 tablespoon hemp hearts shelled hemp seeds

Instructions

  • Toast the bread. While the bread toasts, roughly mash together the avocado, lime juice, garlic, and salt in a small bowl. Place the toast on a plate and spread evenly with the mixture. Top with the sauerkraut and hemp seeds.
