Ingredients

  • Gluten-free nonstick cooking spray
  • 1 cup certified gluten-free steel cut oats
  • 4 cups water
  • ¼ cup milk or dairy-free milk
  • 3 tablespoons brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon

Optional toppings:

  • Diced fresh fruit
  • Honey
  • Cream or yogurt

Instructions

  • Use a 6-quart slow cooker with an inserted 9×5-inch loaf pan that has been greased with cooking spray. Pour enough water around the base of the loaf pan to rise about halfway up the sides. (You are using the slow cooker as a bain-marie, or water bath, for this recipe to ensure your oats don’t dry out.)
  • In a large mixing bowl, combine the oats, water, milk, sugar, vanilla, and cinnamon. Pour the mixture into the prepared pan. Cover and cook on low for 7 hours, or until the oatmeal has set. Spoon into a serving dish and
  • top with fruit, honey, cream, or yogurt, if desired.
