Sweet & Sour Caramelized Onions

Ingredients

  • 4 pounds boiler or pearl onions peeled
  • 1 cup raisins or dried cranberries
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons butter melted
  • 2 tablespoons sugar
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1/3 cup pine nuts

Instructions

  • Use a 6-quart slow cooker.
  • Peel the onions and place them into the bottom of the slow cooker.
  • Add the raisins, vinegar, butter, sugar, salt, and pepper.
  • Stir to combine.
  • Sprinkle with the pine nuts.
  • Cover and cook on high for 3 hours, stirring every 30-40 minutes. The onions are finished when they are brown on the sides and have begun to wilt.
  • Once finished cooking, you may keep them on the “warm” setting for an additional 3 hours.
