Two-Bite Crustless Quiches

Ingredients

  • 12 large eggs
  • ½ cup finely chopped scallions (also called green onions)
  • ¼ cup canned coconut milk (full fat)
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • Chopped tomatoes , for garnish
  • Chopped flat-leaf parsley , for garnish

Instructions

  • Preheat the oven to 350ºF. Line 12 cups of a standard muffin pan with paper liners.
  • In a large bowl, whisk together the eggs, scallions, coconut milk, garlic powder, and salt. Pour the mixture into the lined muffin cups. Bake for about 20 minutes until puffed and golden.
  • Sprinkle with the tomatoes and parsley. Serve immediately.
