Warm Spinach & Chard Salad with Bacon Dressing

Ingredients

  • 8 ounces bacon preferably organic and nitrate-free, chopped into ½-inch pieces
  • 6 tablespoons balsamic vinegar
  • 8 ounces Swiss chard stems removed, leaves thinly sliced5 ounces baby spinach
  • ½ cup thinly sliced red onion
  • ¼-½ cup dried cranberries preferably fruit juice sweetened
  • Sea salt and black pepper to taste

Instructions

  • In a high-sided skillet over medium heat, cook the bacon, stirring occasionally, until browned, 8-10 minutes.
  • Transfer to a paper towel-lined plate with a slotted spoon.
  • Drain off all but ¼ cup fat from the pan.
  • Return the pan to the stove and reduce heat to low.
  • Add the balsamic vinegar.
  • Cook, scraping up the brown bits from the bottom of the pan, until the vinegar reduces slightly, about 1 minute.
  • Remove from heat.
  • In a large bowl, toss the chard, spinach, onion slices, dried cranberries, and cooked bacon to combine.
  • Pour the balsamic dressing over the salad and toss to coat.
  • Season to taste with salt and pepper. Serve immediately.
