Ingredients
  • 8 cups mixed fresh fruit such as blueberries, raspberries, peeled and chopped pears, chopped figs, and halved grapes
  • 2 tablespoons pure maple syrup
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely grated orange zest
  • ½ teaspoon ground cinnamon
  • 1 cup raw cashews soaked in water at room temperature for 8-12 hours
  • ½ cup water or more if needed
  • 2 tablespoons honey
  • ½ teaspoon pure vanilla extract
  • Mint leaves for garnish
Instructions
  1. In a large bowl, combine the fruit, maple syrup, lemon juice, orange zest, and cinnamon. Toss gently to combine. Let sit for 10-15 minutes.
  2. Drain the soaked cashews and place them in a blender. Add ½ cup fresh water, honey, and vanilla. Blend on high until creamy and smooth, adding more water, if needed, to yield a smooth but thick consistency.
  3. To serve, divide the fruit mixture among 8 small (4-6 ounce) glasses, jars, or clear cups. Top each cup with a dollop of cashew cream. Garnish with mint leaves.
