Put a large pan of salted water on high heat and bring to a boil. Rinse the rice in a colander under running water until the water runs clear. Add rice to the boiling water and boil for around 12 minutes. Remove from heat, drain in a colander, and set aside.
Place the avocado slices in a bowl and squeeze the lemon juice on top to prevent discoloring.
Prepare 2 small serving bowls. On the bottom of each, place the following layers: avocado, rice, coriander, mango, and shrimp.
In a separate bowl, mix the lemon juice, honey, and sesame oil. Season with chili powder, salt, and pepper. Pour over the shrimp cups and refrigerate for 1 hour to set before serving.
