Use a 4-quart slow cooker. Place the stew meat into the slow cooker insert and add the entire bottle of peanut satay sauce and the can of coconut milk. Stir well to combine. Place baby carrots on top.
Cover, and cook on low for 8 hours, or until meat is fork-tender. Serve with chopped peanuts on top.

We serve ours over a bed of white basmati rice for a more complete meal.
