  • 2 medium zucchini
  • 2 cups finely ground almond flour
  • ½ cup Health Garden Baking Sweetener
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher or fine sea salt
  • 2 large eggs , lightly beaten
  • ¼ cup melted butter or dairy free butter substitute
  • ½ cup toasted walnuts , chopped
  1. Preheat oven to 325 degrees. Grease a 9 by 5-inch loaf pan.
  2. Grate the zucchini on the large holes of a box grater. Wrap in a towel and squeeze out the liquid.
  3. In a large mixing bowl, whisk together the almond flour, Baking Sweetener, baking soda, cinnamon, and salt. Add the zucchini, eggs, and butter and stir well. Stir in the walnuts then put the batter into the prepared pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes then remove to a wire rack to finish cooling.
