Instructions
Cut the polenta into ½ inch slices then cut the slices into quarters.
Heat the oil in a large skillet over medium-high heat. Add the polenta and fry, turning occasionally, until golden brown, about 5 minutes. Remove the polenta from the pan and reserve.
Add the sausage, red peppers, onion, garlic, and Italian seasoning and cook until the vegetables are soft and the sausage is cooked through, about 10 minutes. Add the reserved polenta back into the pan with the Parmesan cheese and heat through. Stir in the chives and serve.
