Ingredients
For the muffins:
Gluten-free nonstick cooking spray

vanilla extract

blanched almond flour

arrowroot starch

baking soda
For the filling and topping:
½
cup
naturally sweetened jam or preserves

tablespoons
coconut sugar
½
teaspoon
ground cinnamon
2
tablespoons
melted coconut oil
Instructions
Preheat the oven to 350ºF. Spray a mini muffin tin with nonstick cooking spray.
Combine the eggs, coconut oil, almond milk, coconut sugar, and vanilla extract in a blender and blend until smooth and light, about 2 minutes.
Add the almond flour, arrowroot starch, salt, and baking soda.
Blend again for 2-3 minutes, until very smooth, scraping down the sides of the blender as needed.
Pour or scoop the batter evenly into 16 mini muffin molds.
Bake for 10 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Cool for 5 minutes, then carefully transfer to a wire rack to finish cooling.
Fit a pastry decorating bag with a small round tip and fill the bag with the jam.
Carefully insert the tip into the top of a muffin and gently squeeze to fill the muffin with jam.
Stop just as the muffin feels “full.” (If excess jam leaks out, you can wipe it away with a clean dish towel, but the topping will cover it as well.)
For the topping, combine the coconut sugar and cinnamon in a small bowl.
Working with one muffin at a time, brush the top with melted coconut oil and then gently dip into the sugar-cinnamon mixture.
Repeat with remaining muffins.
