Spread the yogurt onto the watermelon, leaving a little pink watermelon flesh exposed as a border. Arrange berries on top in desired fashion. Sprinkle with coconut flakes. Garnish with mint leaves and edible flowers, if using. Cut into 8 wedges and serve immediately.

Note: For the watermelon “crust,” cut a 1-2 inch thick round slice from the center of a large seedless watermelon. You can easily make multiple pizzas by cutting multiple slices from the same melon.Change it up: Use whatever fruit you’d like to top your pizza. Go tropical with mangos, kiwi, and bananas. Late summer stone fruits like cherries, peaches, and nectarines also make a beautiful topping. The yogurt can be replaced with whipped cream, whipped coconut cream, or cream cheese frosting as well.
