Heat olive oil in an oven-safe skillet or cast-iron pan on the stovetop and add pork chops. Cook on each side for approximately 5 minutes, or until brown. While the chops are browning, combine the dried plums, brown sugar, apple cider vinegar, and chicken broth.
Remove skillet from the stovetop and evenly spoon the plum sauce over the top. Bake in the preheated oven for 7-10 minutes, or until the internal temperature of the pork is 145°F.
