Place the tater tots in a single layer on a sheet pan and cook according to the package direction.
Brown the plant-based meat substitute in a large skillet until fully browned, about 5 minutes. Add the taco seasoning and water and cook, stirring occasionally for 2-3 minutes or until fully combined and thickened.
When the tater tots are done, scatter the taco meat all over, then drizzle with the queso. Put back in the oven for 5 minutes.
Top the tater tots with any (or all) topping and serve.
