Ingredients
  • 2/3 cup raw cashews toasted
  • 1/3 cup sesame tahini
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • ¼ teaspoon freshly grated nutmeg
  • ¼ teaspoon sea salt
  • ¼ cup Grade B maple syrup
Instructions
  1. In a food processor fitted with the steel blade, grind the cashews to form a coarse flour, about 25 seconds.
  2. Add the tahini, cinnamon, cardamom, nutmeg, and salt.
  3. Process to combine.
  4. Add the maple syrup and process just until the mixture forms a ball.
  5. Roll the dough into 1-inch balls. (Don’t worry if the dough is oily. That will disappear as the balls chill.)
  6. Refrigerate for at least 1 hour before serving.
  7. Store in an airtight container in the refrigerator.
Recipe Notes

Technique Tip: To toast the cashews, place them in a dry skillet set over medium heat. Toast, shaking the pan occasionally, until fragrant and lightly golden, 4-5 minutes.
