Gluten Free Nut Free Thai Chicken Pizza
In my mind there is no better comfort food than gluten free pizza. There’s all this great stuff piled on a crust, baked until hot and bubbly – and you’re able to eat it with one hand. Perfect! While most of us think of pizza as Italian food – tomato sauce, cheese, maybe some sausage, you can put any kind of topping on it you like. This Gluten Free Nut Free Thai Chicken Pizza recipe is pizza with an Asian influence, Thai influence to be exact.

This is a nut free version of Thai Chicken on a pizza. I used Sunbutter in place of peanut butter to create an amazing sauce. While I don’t often see cheese in Thai food (actually I don’t think I ever see cheese in Thai food) I just don’t think pizza is pizza without some cheese! And personally, I think it goes together really well. A real fusion of flavors. For dairy free, just use dairy free cheese shreds.
1 (9 – 10 inch) gluten free pizza crust
½ cup creamy Sunbutter
3 tablespoons water
2 tablespoons gluten free soy sauce
2 tablespoons honey
Juice of 1 lime
2 teaspoons finely grated fresh ginger
2 cloves garlic, minced or finely grated
1 teaspoon red pepper flakes (more of less depending on the heat level you like)
1 tablespoon olive oil
8 ounces boneless skinless chicken breast, cut into ½ inch cubes
1 cup grated mozzarella cheese
1 red pepper, seeded and thinly sliced
4 green onions, thinly sliced
½ cup fresh cilantro leaves
Preheat oven to 450 degrees. Bake the pizza crust for 10 minutes.
In a saucepan, combine the Sunbutter, water, soy sauce, honey, lime juice, ginger, garlic, and red pepper flakes. Cook over medium heat, stirring, until everything is melted together.
Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 5 minutes. Add half the Sunbutter sauce and cook for another minute, making sure the sauce fully coats the chicken.
Spread the rest of the sauce over the dough. Top with ¾ cup cheese, the chicken, red pepper slices, and green onion. Sprinkle the remaining ¼ cup cheese over the top and bake for 20 minutes or until the cheese has melted and the crust is done.
Top with fresh cilantro leaves and serve.
