“Sour Cream” & Onion Dip

Ingredients
  • 2 cups raw cashews soaked for 6-8 hours at room temperature
  • 4 medium scallions white and light green parts only, chopped
  • ½ cup water
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
Instructions
  1. Drain the cashews and rinse them thoroughly. Place them in a high-speed blender. Add the remaining ingredients and blend on high until creamy and smooth. (Alternatively, process all of the ingredients in a food processor fitted with the steel blade. You may need to add a bit more water and process for up to 5 minutes for a creamy dip.)
  2. Store in an airtight container in the refrigerator for up to 3 days.
