Layered Dinner in the Slow Cooker

I like to turn to a slow cooker casserole or layered dish on busy nights, so all of our dinner items are cooked at the same time, in the same pot. And the result is Layered Dinner in the Slow Cooker!

Ingredients

  • 4 bone-in ribeye steaks
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 4 ears of corn cleaned
  • 4 medium sweet potatoes

Instructions

  • For a layered dinner, you are simply putting each ingredient into its own individual foil packet. Start by tearing off a length of aluminum foil. Place a steak in the middle of it. Sprinkle with a bit of salt and pepper (or use your favorite steak spice rub, if preferred). Fold over the foil and crimp the sides to make a fully enclosed packet. Do the same with each piece of meat and set aside.
  • Wrap each ear of corn and each sweet potato in a piece of foil.
  • Put the sweet potatoes into the pot first, then the corn, then the steak packets on top. Do not add any water.
  • Cover and cook on low for 5-7 hours or on high for about 4 hours. Be careful when opening the foil packets – watch out for steam!
