Easy Gluten Free Chocolate Peppermint Fudge Recipe

I love fudge any time of the year but especially during the holidays. Not only do I especially love to eat fudge during the holidays, I like making it to give away. I find that this easy gluten free chocolate peppermint fudge recipe makes a really great hostess gift when I arrive at dinner or holiday parties.

What I am not fond of is the time and effort it normally takes to make fudge. Don’t get me wrong, I am not opposed to expending a bit of extra effort creating lovely holiday treats, but with all the other places I am expending extra effort (i.e. shopping, wrapping, decorating, cooking … ) I am equally not opposed to shaving off some of the effort where I can.

This brings me to this incredibly simple yet scrumptious peppermint fudge. I employed a little bit of a holiday hack in this recipe by starting out with pre-made frosting. I used Wholesome! Organic frosting in both the chocolate and white chocolate/peppermint layers of this fudge and let me tell you – it could not be easier!

This fudge is so pretty and just bursting with holiday flair!

Ingredients
  • 1 12-ounce bag semisweet chocolate chips
  • 1 12.5-ounce jar Wholesome! Organic Chocolate Frosting
  • 1 12-ounce bag gluten free white chocolate chips
  • 1 12.5-ounce jar Wholesome! Organic Vanilla Frosting
  • ½ teaspoon pure peppermint extract
  • 2–3 drops red food coloring
  • 24 peppermint candies
Instructions
  1. Spray an 8 or 9 inch square cake pan with cooking spray. Crisscross two sheets of waxed paper in the pan with a couple inches overhanging on all sides.
  2. Place the semisweet chocolate chips in a microwave-safe bowl and microwave at high power for 60 seconds or until the chocolate is almost all melted, stirring every 30 seconds. Stir in the chocolate frosting until fully combined. Spread into the pan and level the top.
  3. In another microwave-safe bowl, melt the white chocolate chips for 60 seconds or until the chocolate is almost all melted, stirring every 30 seconds. Stir in the vanilla frosting, peppermint extract, and food coloring. Add enough food coloring to make the mixture light pink. Spread the mixture over the chocolate layer, smoothing the top. Place a couple sheets of paper towels over the top and press down, absorbing any extra oil.
  4. Place the peppermint candies in a plastic food storage bag and crush them with a rolling pin. Spread the candies over the top, pressing in lightly. Refrigerate for at least 2 hours.
  5. Using the waxed paper to help you pull the fudge out of the pan, remove and cut into small squares.
