  • 12 chicken drumsticks
  • cups gluten-free beer
  • 2 tablespoons canola oil
  • 1 tablespoon honey
  • 2 tablespoons pure maple syrup
  • ½ tablespoon dark cane sugar
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon kosher or fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon sweet paprika
  • ¼ teaspoon chili powder
  • 1 handful fresh mint leaves finely chopped, plus more for garnish
  1. Rinse the chicken drumsticks and pat them dry. Place in a large bowl.
  2. Mix together all the remaining ingredients to make a marinade. Pour over the chicken. Cover with plastic wrap and refrigerate for at least 6 hours.
  3. Preheat the oven to 380°F. Remove the chicken from the marinade and transfer to a large, nonstick roasting pan. Bake the drumsticks for 15 minutes, then turn and bake for another 10 minutes.
  4. Meanwhile, transfer the marinade to a pan. Simmer for 15-20 minutes, stirring occasionally, until it has reduced and thickened slightly.
  5. Remove the drumsticks from the oven, brush generously with the marinade, and return to the oven for another 5 minutes. Remove them again, turn them back over, and brush with the rest of the marinade. Bake for another 5 minutes.
  6. Remove from the oven, garnish with additional mint leaves, and serve.
