  • Oil or gluten-free nonstick cooking spray
  • 3 cups cooked gluten-free stuffing
  • 1 cup chopped cooked turkey
  • ¼ cup whole cranberry sauce
  • 7 large eggs
  • 3 tablespoons milk or dairy-free milk
  • ¼ teaspoon kosher or fine sea salt
  • ¼ teaspoon freshly ground black pepper
  1. Preheat the oven to 375°F. Grease 18 standard muffin tins well.
  2. Combine stuffing, turkey, and cranberry sauce in a mixing bowl. Divide the mixture among the prepared muffin tins, loosely packed.
  3. In a medium mixing bowl, whisk together the eggs, milk, salt, and pepper. Pour over the stuffing in the muffin tins, filling between ½ and ¾ full. Bake for 25-30 minutes or until set and browned.
  4. Can be reheated, as needed, in the microwave or oven.
