Ingredients
  • 2 pounds asparagus trimmed
  • 2 lemons zested and juiced (about 2 tablespoons juice)
  • 6 garlic cloves sliced
  • 2 tablespoons salted butter melted
  • ¼ teaspoon freshly ground black pepper
Instructions
  1. Use a 6-quart slow cooker with an oven-safe baking dish inserted (I use a 1½-quart CorningWare dish). Place the dish inside of the slow cooker and add the asparagus. Add 1 teaspoon of zest, the lemon juice, garlic, butter, and pepper. Stir gingerly to combine. (There is no need to add water around the base of the baking dish.) Cover and cook on high for 2 hours.
