Mango Chi-Chi Cocktail
Get out your blenders … it is officially that time of year to start making frozen cocktails! There is nothing I enjoy more than sitting outside and feeling the warm sun on my skin while sipping a delicious frozen cocktail. If you have ever had a frozen Chi-Chi cocktail, you know how tasty they are. Let’s kick that up a notch with some tropical mango!
- 2½ ounces vodka (tequila also works well)
- 3 ounces cream of coconut
- 3 ounces pineapple juice
- 3 ounces mango puree
- 2 cups ice cubes
Pour all the ingredients into a blender. Blend well until there are no more chunks of ice and the cocktail has a smooth consistency. Serve in a hurricane glass.
To make a non-alcoholic version, omit the vodka. Add either pineapple or mango juice as a substitute if the consistency is too thick.
**Disclaimer: Always check with alcohol manufacturers first to find out if there is any gluten used in processing.**
