Summer 2019 gluten-free favorites
Today is officially the first day of summer! If you’re in a state with real seasons, this is a welcome change. If you’re in a state like Florida where it’s summer for about 70-80% of the year, then this is probably just a regular ol’ Friday for you. Either way, it’s nice to mark the start of a season and to actively enjoy it while it lasts. And because we all need fuel while we’re kayaking, boating, fishing, lounging by the pool, or doing any other summer activity, here’s my list of summer 2019 gluten-free favorites that will be accompanying me and my family on our summer adventures.
Seafood and summer go hand-in-hand, which is why TransOcean Crab Classic is the first on my list. This surimi seafood product is a mix of MSC-certified Alaska pollock and king crab meat. It goes well on top of salads and pastas or in casseroles or stir-fry dishes. Or, just eat it right out of the bag with a little cocktail sauce for dipping. It’s a healthy seafood snack that you can take on the go to picnics or the beach this summer. Try the chunk style in po’boy sandwiches or other warm dishes or the flake style in cold dishes. They also have a lobster classic, which is equally as delicious!
There’s nothing like baking a batch of warm, gooey cookies with the kids while they’re home and out of school. Cooking and baking together is a wonderful way to bond and create memories. If you want to bake a batch of gluten-free, dairy-free, soy-free, preservative-free cookies, BeReal Dough is where it’s at. This shelf-stable cookie dough can be baked into delicious cookies – Oatmeal Cranberry, Cacao Fudge Chip, Good Sugar Cookie, Cape Cod Cranberry Chocolate Chunk, Holiday Gingerbread, and Signature Chocolate Chunk. But, what’s even better about this cookie dough is that it can be eaten raw, so there’s no need to heat up the kitchen if it’s a scorching hot summer day. And let’s be honest, who doesn’t love raw cookie dough? Pro tip: scoop balls of your favorite flavor into a small cup with a lid and pack with your beach gear. You can chill or even freeze ahead of time for a frosty treat, or let the sun warm the container and enjoy an ooey-gooey snack. Don’t forget your spoon!
Power through those long summer days with Paleo Pro’s Paleo Power Coffee. This energy drink mix contains grass-fed, pasture-raised beef collagen, ground coffee, beet root powder, and more to create a blend that helps with energy and blood sugar levels, fat burning and appetite control, and metabolism and gut function. It’s a delicious blend that delivers a pick-me-up for your long days of adventuring in the sun, early morning workouts, or whatever the season brings. Also try Paleo Pro’s other products, including protein powder, collagen, recovery powder, and vitamin D3 and fish oil.
These little treats are ideal for an easy summer sweet. Put them in the fridge and hand them off to the kids when they come in the house from playing outside, or pack them in the cooler to take on a picnic or to the beach. (They’re covered in chocolate, so make sure you eat them soon enough or keep them chilled!) It’s all the deliciousness of raw cookie dough in a chocolate covered treat, without 7 of the 8 top allergens (they contain coconut, which is considered a tree nut). They’re the perfect allergen-friendly treat to keep on hand for guests, especially children, who might have food allergies. We love the Snickerdoodle ones best, but they’re also available in Sun Better (a sunflower butter flavor), Chocolate Chip, and the brand-new Birthday variety.
If you know me, you know I love a good low-carb snack. ParmCrisps are one of my go-to snacks for a variety of occasions – at home snacking and watching TV, entertaining guests with a charcuterie and cheese platter, sharing with friends and family at a picnic or poolside, on a road trip, you name it! Made of 100% Parmesan cheese and natural flavors and herbs, these carbless crackers are excellent for people on a Keto or grain-free diet. Their newest flavor, Pizza, is perfect for summer. Pizza ParmCrisps and gluten-free beer or lemonade by the pool? Yum!
Send a pack of these deliciously crunchy treats with your kids when they go on summer adventures. These gluten-free, dairy-free, peanut-free, tree nut-free, soy-free, egg-free, and vegan snacks are ideal for sharing with groups of people because of how allergen-friendly they are. Serve them up in a bowl at your next get-together. They are free from cholesterol, artificial colors, artificial flavors, or preservatives. I love the lemon-flavored ones for summertime, but they’re also available in classic, dark chocolate, mint, mocha, pumpkin, and raspberry.
Schär is a classic gluten-free brand – one that’s always found in my pantry in some form, whether it’s a loaf of bread or crackers or cookies. There are countless products from Schär I’d recommend you have on hand for summer, but one of my favorites is the honey grams. Break out these crunchy grams for a classic s’more, or layer them with whipped cream and strawberries for a fun twist on strawberry shortcake. Or, crush them up and make a pie crust out of them … key lime, perhaps? Any way you serve them, you’ll love them!
